This simple recipe is one of our summer favourites – so good for you, cool and yummy.
Put a selection of fruits in the freezer until well frozen – we have had the most success in terms of texture and flavour by using chopped mango, bananas, passionfruit and pineapple. A few sprigs of mint is a great addition if you have it. You can also try peaches and nectarines or the ever popular berries which have the benefit of being able to be bought frozen and ready to go. If using berries you may need to loosen the mix a little with some apple juice or soy milk.
When the fruit is frozen put it all in a blender with some ice cubes and blitz till you have a smooth, creamy, fruity, cooling bowl of yum.
This is a fantastic dairy free alternative to ice cream and tastes great without all the sugar, colours and flavourings of commercial ice creams.
