Snack time without the guilt

If you haven’t tried these before be ready to become addicted.

There are lots of these on the market but they are often expensive and I don’t really get why. They have few ingredients and once you have soaked the dates can be ready in under 10 minutes.

These little balls of yumminess take just a few minutes to make. They are really good for you and can be enjoyed by almost everyone with dietary requirements being cane sugar, wheat, dairy and egg free. They also have the added benefit of great helpings of wholesomeness.

My son thinks they are like little lamingtons. I haven’t told him yet what’s really in them !

2 cups of dates soaked in water for about 30 minutes
4 tablespoons of cocoa or carob powder
2 tablespoons of honey
1/2 cup of almond paste or other nut butter
1 1/2 cups coconut
1 teaspoon of vanilla
Zest of 1 orange
100g of pecans

Whiz up all the ingredients in a blender. Form into balls and roll in additional coconut , shredded is good if you like a bit of texture.

Voila ! Makes about 30.
