Carrot and sweet potato fritters with spinach sauce

Sweet potato and carrot fritters

500g sweet potato, grated
3 med carrots, grated
1 teaspoon  cumin
1 teaspoon salt
2 eggs
1 1/2 C plain flour

Place grated carrot and sweet potato in a clean teatowel and squeeze to remove excess liquid. Add to bowl with all other ingredients and mix. Divide into about 12- 15 portions.
Cook in a frypan with a little olive oil for about 2 -3 minutes each side.

Spinach sauce
1/2 clove garlic
small bunch of spinach ( about 2 -3 handfuls)
3 shallots
1/2 C sour cream
1 avocado
small handful of basil

Place all ingredients in blender and whiz till smooth

Serve with a big salad
